PRODUCT INFO
All pure natural honey will eventually crystallize due to the natural sugars in it. Raw honey has the tendency to granulate faster than highly processed honey as the sugar molecules have more to attach to because of the pollens, propolis and other inherent ingredients still present.
It will not granulate any further and can be kept for months in correct storage conditions.

Our 3 Star Great Taste Award, two time Silver Medal (in the Irish Quality Food & Drinks award) and which was also a top 5 and a finalist in ‘Blas na hEireann – Irish Taste Awards’ Blossom honey, is not an overly sweet honey.
It does have a rather distinctive character, the finish is smooth and well balanced and lingers delightfully in your mouth. You can taste the nectar & pollen and all of the bees hard work that’s gone into producing it. The variety of flowers the honey bees have fed will include: Willow, Crocus, Cherry blossom, Dandeloins, Lime, Blackberries, Clover, Primrose and a whole range of wildflowers.

“Aromatic with bursts of forest and botanical scents. The natural woodiness and floral notes give strong and complex flavours that could stand up well when baking or cooking, or simply on its own. Crystal clear glowing honey with a bright and fresh flavour.”
“A thin, runny honey which instantly delivers the anticipated woody and botanical notes. An intense, lingering flavour, with a gently spiced finish. A very nice honey, which would work well in many different ways, both in cooking and as a table honey.”
“What a lovely amber hue! The palate bursts with floral intensity, carrying a tinge of treacle and a subtle bitterness. This has a ridiculously long finish and one that peaks at different stages with various floral aromas and notes – one of the judges was reminded of lilies. Majestical indeed.”
“A glowing amber coloured honey with a floral aroma. There is an edge to this honey, rather like a caramel or toffee which has been cooked to a dark finish, almost but not quite bitter. Smooth and with a long, resounding finish. Some orange and citrus notes step in towards the finish. The orange and caramel elements give balance to the inherent sweetness.”
